Dairy Free Sorbet
I adapted this recipe from The Minimalist.
1 cup frozen fruit (I used a combo of black berry, blue berry, and raspberry)
2 Tbsp white sugar
3 Tbsp Silk vanilla creamer
4 - 5 Tbsp water
Put the first three ingredients in your food processor and pulse to break up the frozen fruit. Add water slowly so it stays in a sorbet consistency and doesn't turn into a smoothie.
The boys and I ate this immediately, so I haven't experimented with putting it back in the freezer for a later time... if you try to, let me know how it goes!

We tried this (ok, a version of it at least), everyone LOVED it. A great replacement for ice cream which we used to eat alot of. Thanks for the idea!
So glad you all enjoyed it!! I can see this being a common treat around our house this summer!!! The hubs was a bit disappointed that it was all gone before he got home and wasn't able to try it, so now I MUST make it again! :)

That looks lovely! I'll have to try that with Turtle Mountains new coconut milk beverage (my son is allergic to soy).
I made this tonight. It was AWESOME! I used Chocolate Silk and only used about 2 T of water. I only have a blender and it was a pain getting everything blended, so now I will be buying a food processor.
I froze what my son didn't finish and we just got it out. It froze pretty well, it reminds me of Italian ice. Yum!
