1 1/2 c AP flour
1/2 c Whole wheat flour
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1/2 c dairy free margarine or coconut oil, softened
1 c white sugar
3/4 c unsweetened applesauce
1 tsp vanilla
1 c apple, peeled and chopped
1 tsp cinnamon
1/8 tsp nutmeg
Preheat oven to 350.
In a large bowl, beat margarine (or coconut oil), sugar, applesauce and vanilla. (If using coconut oil, the mixture will be "grainy" looking from the oil solidifying again.)

Mix flours, baking powder and soda, salt, cinnamon and nutmeg. Add to applesauce mixture. Stir until just moistened.
Fold in apple chunks. Mixture will be thick.

Bake 30 - 35 minutes.
Makes about 18 muffins.

ICING
3/4 c confectioner's sugar
1 Tbsp dairy free margarine
3/4 tsp vanilla
2 tsp warm water
Mix together and pour over warm muffins. If the icing hardens before you have finished pouring, can be reheated in the microwave to return to glaze consistency.

I bet these muffins would be good with bananananananananana and raisins, also! I am so thankful to have found your site. I hope it okay with you to put a link on my blog to you!
We loved these muffins. I used 1 cup AP flour and 1 cup oat flour instead of the whole wheat. I like to bake with oat flour because it offers the goodness of whole grains without the heaviness of whole wheat flour. You can buy oat flour but I just make my own by grinding up oatmeal in the blender. These muffins were so good!
Hi,
I just finished making these. I found your blog when I googled for apple muffins with no egg and no milk, honestly because we're just out and I didn't want to go to the store.
I added an over-ripe banana that I had and a handful of pecans. They turned out delicious, I don't miss the egg or milk at all. Thanks!!
These were delicious! I didn't want to use so much sugar, so I substituted half the sugar with maple syrup and dumped in about 3/4c. of ground flax seeds too - DELICIOUS! The kids all loved them!
