Dairy Free Brownies II

These were "all the rave" at my last get together! Everyone kept saying, "These are homemade aren't they? You can tell; they are so good!"

2 cups sugar
1 cup dairy free margarine (2 sticks - softened)
4 eggs (well beaten)
6 level Tbsp cocoa powder
2 Tbsp oil
1 cup all purpose flour
2 tsp vanilla
1 cup nuts (optional)

Mix it all together. Pour into a greased 13x9 pan. Cook at 350 for 35 - 40 minutes.

Should I melt the margarine or cream it at RT together with the sugar?

Honestly, I usually take the sticks of margarine straight from the fridge and heat them in the microwave together in their wrappers for about 15 - 20 seconds (just to soften, not melt). Then I throw everything together in the bowl and let my kitchen aid stand mixer do all the work.

If you have other questions, just let me know. Going dairy free is very daunting in the beginning, but once you find the right substitutions for milk and butter, it's not so bad.
